What is the difference between the 4,5,6,7 pocket models? Are the pockets different sizes?
No, the numbers refer to the number of pockets on each belt. Belts with more pockets are for people with bigger waist sizes. Here is a rough guideline to help you choose what "size" you need:
4 weight pockets: 25" to 40" waist lengths
5 weight pockets: 30" to 45" waist lengths
6 weight pockets: 35" to 50" waist lengths
7 weight pockets: 40" to 55" waist lengths
If I go with the six pocket, and find that I've lost a little weight, can I adjust this belt to fit snugger?
Yes, you can adjust each size to a certain extent. The 6 pocket belts adjusts from 35" to 50".
Are the pockets partially removeable or are they fixed?
